Homemade Strawberry Pie Filling Recipe

Fresh strawberries and Jell-O are used to make the strawberry pie filling. Compared to the store-bought version, it tastes so much better! Spread it on toast or bread for breakfast or use it to decorate pies and pastries.

Easy strawberry pie filling recipe

The wonderful thing about this strawberry pie filling is that you can use it in various other desserts besides pies. And believe us when we say that making it from scratch is worth the effort and tastes far superior to the canned form.
We frequently take advantage of the abundance of strawberries during the entire strawberry season and prepare large quantities of this recipe. The fruits simply taste better when in season, even though you could prepare this dish all year long. This time of year, they are also tastier, juicier, and less expensive.

Ingredients

  • 6 cups fresh strawberries (cored and sliced)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 cup white granulated sugar
  • 1/4 cup cornstarch
  • 1 1/4 cup water
  • 1 3.4- ounce box strawberry Jell-O powder

Instructions

  • In a large bowl, stir together the strawberries, lemon zest, and lemon juice. Set aside.
  • In a large saucepan over medium heat, whisk together the sugar, cornstarch, and water until smooth and combined. Bring to a boil and boil for 1 minute.
  • Add the strawberries, gently stir in and simmer for 2-3 minutes.
  • Remove saucepan from the heat and gently stir in the Jell-O powder, careful to not crush the strawberries.
  • Let the mixture cool at room temperature for 2 hours, then refrigerate until fully chilled and settled. Transfer to a sealed container and refrigerate for 5 days.
  • Use on pies or other desserts.
