Mexican Taco Breakfast Burrito

Ingredients
- 1 lb. ground beef
- 1 onion diced
- 4 cloves garlic minced
- 1 tablespoon taco seasoning
- 1 jalapeno diced
- 8 large eggs
- 1/3 cup half and half
- 4 tablespoons unsalted butter
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup American Cheese
- 1 large tomato diced
- 1 avocado diced
- 1 cup refried beans
- Hot sauce for serving
Instructions

Place a large skillet over medium heat and once hot, cook ground beef, until no longer pink. Drain any excess fat.

Add onion, garlic, jalapeno, salt, pepper, and taco seasoning. Cook until the beef is browned.

In a medium bowl, whisk together eggs and half and half.

Wipeout the skillet, place over medium heat and melt the butter. When butter is just starting to foam, reduce heat to medium-low and add beaten eggs. Using a rubber spatula, stir every occasionally until soft curds form. Season with salt and pepper to taste.
Assemble:

In the center of each tortilla, spread ¼ cup of refried beans, add ¼ of the ground beef, ¼ of the scrambled eggs, ¼ cup of each cheese, and tomato pieces and avocado.

Fold in the two sides and roll up tightly. Serve with hot sauce.
