Chipotle Corn Salsa Recipe

The ideal appetizer or snack is Chipotle Corn Salsa, which is prepared with sweet corn, lime, and spicy, crunchy jalapeno peppers.
It only takes a few minutes to chop up some ingredients and combine them in a dish to make your own salsa. Cooking is not required. Simply combine, let it chill, and then devour the finest salsa you’ve ever had.

There are only a few ingredients required for this fast and simple Chipotle corn salsa recipe, most of which you probably already have in your pantry.
It has all the same vibrant flavors as the restaurant version, with the additional advantage of being able to control the quality of the ingredients. Nothing extravagant is necessary.

Only corn, red onion, cilantro, peppers, and lime juice are necessary. This is one of the best recipes to share with everyone because it combines lemon and citrus with cilantro and the other ingredients.

Recipe variations:

  • Poblano: Although Chipotle’s corn salsa recipe uses jalapenos, you can use poblano peppers instead if you don’t like high heat. 
  • Citrus: You can use any citrus juice you like for this recipe.
  • Frozen: Feel free to use frozen corn instead of canned. 
  • Other corn: Also, you could use sweet white corn instead of yellow. 
  • Beans: Add a cup of cooked black beans for a heartier salsa.
  • Veggies: You could also add other veggies like tomatoes or red bell pepper.

Ingredients
  • 1 lb. canned yellow corn (drained – or fresh grilled corn)
  • 2 jalapenos (de-veined and de-seeded, and very finely chopped)
  • 1 small red onion (very finely diced)
  • 1/4 cup fresh cilantro (chopped)
  • 1 lime (juiced)
  • 1 teaspoon lemon juice
  • kosher salt (to taste)
  • ground black pepper (optionally – to taste)

Instructions

  • Prepare all the ingredients and add them to a large mixing bowl.
  • Stir, adjust for salt. Cover and let sit in the fridge for an hour for the flavors to meld together.
  • Give the salsa another good stir and serve with chips.
