Easy Cajun chicken alfredo pasta

Being a busy parent, I am constantly looking for delicious meals to prepare that are simple to follow and can be made by anybody. That is what this simple Cajun Chicken Alfredo dish is. Rich and creamy at the same time, it has a ton of taste and just the right amount of Cajun spices.
This meal is elevated thanks to the alfredo sauce. Additionally, because it absorbs all the tastes into it, it goes great with spaghetti. Cutting the chicken breasts into tiny pieces is perhaps the most difficult step in this dish. It shouldn’t take you longer than five minutes to prepare all the ingredients. The rest is then easy.

Combine everything in the pan, then simmer for 12 to 15 minutes. Nothing could be simpler than this! You may also prepare a bigger batch because the leftovers are wonderful. Even the next day’s flavor is better! Yum mm!

Ingredients
  • 4 tablespoon olive oil divided
  • 2 pounds chicken breasts cut into 1-inch cubes.
  • 4 cloves garlic minced.
  • 1 quart chicken broth low sodium
  • 2 1/2 cups heavy cream
  • 1-pound medium shell pasta
  • 2 1/2 cups parmesan cheese freshly shredded
  • 2 teaspoon Cajun seasoning or more.
  • 1/2 teaspoon salt or to taste.
  • 1/4 teaspoon ground black pepper or to taste.
  • 1 tablespoon parsley chopped.
Instructions
  1. Cut chicken breasts into 1-inch pieces. Season with salt and pepper and 1 teaspoon of Cajun seasoning.
  2. Place a large pan over medium heat, add 2 tablespoons of olive oil and brown the chicken. If needed, brown it in batches to prevent overcrowding.
  3. Once the chicken is browned, add two more tablespoons of olive oil and minced garlic, stir and sauté for about one minute.
  4. Add chicken broth, heavy cream, 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper, remaining 1 teaspoon of Cajun seasoning and uncooked pasta, stir to combine.
  5. Once the mixture starts to boil, cover and reduce heat to a simmer.
  6. Simmer for 15-20 minutes or until pasta is tender, stir occasionally.
  7. Remove from heat and stir in 2 cups of shredded parmesan cheese. Taste and adjust for salt and pepper.
  8. Serve sprinkled with fresh parsley and remaining cheese.
