Slow Cooker Brown Sugar Garlic Pork

Ingredients
- 4 lb pork shoulder or butt (cut into medium chunks)
- 1 teaspoon salt
- 1 teaspoon pepper
Sauce:
- 1/2 cup unsalted butter
- 1/2 cup brown sugar (packed)
- 1/4 cup apple cider vinegar
- 1/4 cup apple juice
- 1 tablespoon liquid smoke
- 4 garlic cloves (minced)
- 1/4 teaspoon each salt and pepper
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Add pork chunks to a large bowl, sprinkle with salt and pepper, and toss.
- Place a nonstick skillet over medium-high heat, add some oil and once its hot, brown the pork on each side until golden brown. Set aside.
- Add all sauce ingredients to a saucepan over medium heat. Stir to combine and cook until butter and sugar have melted. Set aside.
- Transfer pork pieces to the slow cooker and pour the sauce on top.
- Cover and cook on HIGH for 4-5 hours or on LOW for 8-9 hours.
- Serve the pork with rice or mashed potatoes and drizzle with the slow cooker sauce.
- Garnish with chopped parsley and rosemary before serving.
