Ingredients

  • 1 1/2 lbs ground beef
  • 2 tablespoons taco seasoning
  • 1 purple onion (diced)
  • 16 oz package rotini
  • 2 cups shredded cheddar cheese (or Mexican blend cheese)
  • 2.5 oz can sliced black olives (drained)
  • 2 cups cherry tomatoes (sliced)
  • 1 cup corn kernels
  • 2 cups shredded lettuce.
  • 2 cups crushed Doritos.
  • 16 oz bottle Catalina dressing

Instructions

  • Place a non-stick medium skillet over medium-high heat and once hot add the beef and brown it. Cook the beef until no longer pink then drain and discard the grease.
  • Add the taco seasoning and about 1/4 cup water and cook until reduced, set beef aside to cool.
  • Meanwhile, cook pasta according to package directions. Run under cold water to cool, drain well and place it into a large bowl.
  • Add the rest of the ingredients, including the cooled beef, except the Doritos.
  • When ready to serve add in the crushed Doritos and stir, add the dressing and stir until everything is well coated.
  • Garnish with chopped parsley, drizzle with sour cream, and serve.
