Air Fryer Potato Skins

Crispy Air Fryer Potato Skins are stuffed with two kinds of cheese, sour cream, and copious amounts of bacon. Put the toppings on the side because everyone has a different opinion about what makes the best potato skins.

My family truly loves these potato skins, so I try to prepare a batch every game day and occasionally just for an after-school snack.
Additionally, this is a fantastic way to enjoy the nutritional advantages of potato peels with a variety of mouthwatering toppings, like cheese, sour cream, and bacon.

How to serve:

For a hearty snack or on game day, these filled potato skins are the ideal appetizer. They work well as a side dish as well.

Remember to use butter. A bowl of your preferred butter or margarine should be available for everyone who requests some.
Use mozzarella cheese, pepperoni, and bacon bits to create pizza skins.
To make taco skins instead, combine ground beef, salsa, cheddar cheese, lettuce, tomatoes, and cheese.
Why not serve your potatoes as the main course by topping them with a dab of chili?

Ingredients

  • 1 batch baked potatoes (cool)
  • 1 cup cheddar cheese (shredded, divided)
  • 1 cup pepper jack cheese (shredded)
  • 12 slices Bacon cooked (and chopped)
  • 1/2 cup sour cream

Instructions

  • Preheat the air fryer to 385 degrees F.
  • Cut the potatoes in half lengthwise. Use a small spoon to carefully remove the flesh from the inside, leaving a 1⁄4-inch “rim”.
  • Brush the potatoes with cooking oil. Season with salt and pepper.
  • Place the potatoes into the air fryer basket, skin side up.
  • Cook for 10 minutes, flipping halfway.
  • Sprinkle half of the cheeses evenly inside each of the potato skins. Cook for 5 more minutes, or until the cheese is melted.
  • Fill with sour cream, bacon, more cheese, and serve warm.
