Crockpot Cheeseburger Soup
It’s made with simple ingredients like cooked ground beef, broth, potatoes, carrots, onions, cheese, milk, and butter, along with a few common seasonings. Just toss everything into the crockpot and let it simmer all day. This indulgent soup is a guaranteed crowd-pleaser, earning five stars every time I serve it, and its hands down my favorite soup recipe.
Crock pot soup was first made when the crock pot was invented by Irving Naxon who used it as a bean cooker for cholent in 1940. However, it was the Rival Company that patented it in 1971. Soup has been around since 20,000 BC though, so we have to thank the Neanderthals for this delicious soup recipe.

Ingredients
- 1 lb. ground beef browned and drained
- 4 small potatoes peeled and diced
- 2 carrots peeled and diced
- 1 celery stalks peeled and diced
- 1 onion diced
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 3 cups chicken broth low sodium
- 1 lb. cheddar cheese
- 3 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 2 cups milk or cream
Instructions

Place potatoes, onions, carrots, celery, dried basil, and parsley in the crockpot.

Then, add the chicken broth over it. Cover with lid. Cook on LOW for about 7 hours OR on HIGH for about 4, or until potatoes are tender.

About 1 hour before serving, cook the ground beef in a large skillet over medium-high heat. Drain the grease out of it and add the cooked beef to the pot.

Next, add butter to a clean skillet and melt it over low heat. When melted, slowly whisk in flour and cook until golden brown and bubbly (about 1 minute).

Whisk in the milk (or cream), salt, and pepper.

Pour the mixture into the crockpot and stir to combine everything.

Add the shredded cheese to the crockpot and gently stir.

Cover with lid and cook another 30 minutes or until cheese is melted.

Serve immediately with your favorite toppings, we recommend pickle slices and croutons.
